Picked early for fresh acidity. 6 months on lees. Wild ferment on skins for 33 days.
Unfiltered & Unfined. Minimal sulphites added. Vegan Friendly.
Tasting notes – Mandarin, marmalade, white peach, lemon, thyme and rosemary. Easy drinking, not too tannic.
Serving & Pairing – Cold.
